Mussels in Galicia

We love food and eating. One of our challenges on this trip is to go to local markets, get fresh ingredients in season from the places where we stop and cook in our campervan with our limited resources. There´s this general idea that when you´re camping or living in a van, food is not a priority… you don´t have the resources… so you just eat something easy, fast … unhealthy and meeeh!! ( I would say 🙂 ) This time we didn´t even go to the market, we picked our delicacies ourselves… In Galicia you have to eat mussels, they´re fresh and everywhere, if not in the wild the seafood industry is quite strong in this region and cheap. Here´s our take on mussels a la Galiciana! Enjoy 😉

Recipe:

1Kg fresh mussels

a good glug of olive oil

2 Big onions

4 cloves of garlic

2 Tomatoes

1 Beer

1 teaspoon of thyme

Half a cup of coconut milk or cream if you prefer

 

Chop the onions in rings and thinly slice the garlic and sweat them over the fire; add the tomatoes roughly chopped. Add the mussels and stir until they start to open, add a splash of beer (drink the rest) and keep stirring to incorporate the flavours, add the coconut milk, let it simmer for a few minutes, and voila! You want to eat them with a fresh loaf of bread, the sauce is yummy! And a cold beer of course 😉

This recipe is open to interpretation, a bit more or less of anything will still be delicious so don´t get too caught up in the measurements, taste and adjust as you go.
